1.5 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)
Instructions:
Prepare the Marinade:
In a bowl, whisk together honey, olive oil, chipotle peppers, adobo sauce, soy sauce, lime juice, minced garlic, ground cumin, smoked paprika, salt, and pepper until well combined.
Marinate the Chicken:
Place the chicken pieces in a large resealable plastic bag or a shallow dish.
Pour the marinade over the chicken, making sure all pieces are well coated.
Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
Prepare the Skewers:
Preheat your grill to medium-high heat (about 400°F or 200°C). If using an oven, preheat to 400°F (200°C) and line a baking sheet with foil or parchment paper.

For oven baking: Place the skewers on the prepared baking sheet and bake for 15-20 minutes, turning halfway through, until the chicken is cooked through.
